In contrast to most other sugar cane brandies, good rum is characterised by long maturation in wooden barrels, similar to whisky or cognac. The longer the distillate matures in wooden barrels, the more rounded its aromatic taste will be. A side effect is the first yellowish, then brown colouring, which the initially colourless distillate assumes.
